How a simple treat can transform your day!

Hey there! I wanted to share something I’ve been loving lately—healthy meal prepping with one of my go-to recipes: superhero muffins! I didn’t create the recipe myself (click here for recipe), but I love making small tweaks to fit my healthy lifestyle while still keeping things super tasty. These muffins are perfect for keeping my energy up during busy weeks, especially when I’m working on my art.

I’m always mindful of what I eat because when I’m not, my energy levels drop, and it really shows when I paint. I’ve noticed that when I’m fueled right, I feel much more focused and inspired.

I like to swap out ingredients like using flaxseed eggs instead of regular eggs and oat flour instead of almond flour. Oat flour is a favorite of mine and it has this nice hearty texture without compromising on taste. Instead of sugar, I opt for maple syrup or honey, which keeps things sweet but still on the healthier side.

One of my favorite things? Whole walnuts. I love the big crunch you get when they crisp up in the oven. I also toss in some healthier chocolate chips because I’m a big chocolate lover. That little kick just makes the muffins extra special!

These muffins have been my go-to for a while. They really helped fuel me back when I was marathon running, and now they’ve become my favorite snack to keep me going when I’m creating art. They’re ready to grab, keep me energized, and, most importantly, make me happy!
